Philosophy of Food

To the extent possible, the food we serve will be the finest available. We will serve only fresh, wholesome, locally grown, certified organic and in season food- free from growth hormones, antibiotics and pesticides. We will endeavor to avoid foods from factory farms and producers who utilize inhuman grazing and slaughtering techniques. Our guiding principle will be flavor, health and sustainability.

Philosophy of Wine

To the extent possible and based upon availability, we will serve the finest wines for the country and region being featured. We intend for our wines to come from small producers who maintain the highest standards. Each wine will be selected based upon the terroir, style, typicity, balance complexity, concentration and vintage of the region with concern for the highest quality in appearance, aroma palate and body taking into consideration grape variety, viticulture, and winemaking techniques, ageing and storage.
